The purpose of this exercise is for you to think about a way you could modify and ‘Lighten Up’ a recipe. We learned in lab that there are a variety of ways we can make something healthier: we can substitute vegan protein sources for animal products that are high in saturated fat; we can increase the proportion of fruits and vegetables in an entrée; we can use reduced-fat products;we can bake or sauté instead of fry; or we can even a little  from all of these!

You will find your own recipe that you want to modify. You will type the original in the space provided on here, and then think about what modifications you can make to the recipe to make it healthier. You will then discuss the changes you made and how you think it will change the recipe overall. Do you think people will notice changes? This is a brand new assignment, so I’m not exactly sure what I expect. But the more thinking and creativity you put into it, the better the grade. And I kept it to 5% of the total grade since there will be such a learning curve with what we are expecting to see.  Here is an example of one with minimal changes. Please be more creative than this! Something like this with just 1 simple change would get you a 70%. At least you did it. Submit a recipe with a couple changes

 

Original Broccoli Cheese Soup:

 

1 tablespoon butter

1 small onion diced

1 cup diced carrots

3 cups fresh broccoli

2 cups chicken broth

1/2 teaspoon each thyme and garlic powder

salt& pepper to taste

2 tablespoons flour

1 1/2 cups heavy cream

1 cup sharp cheddar cheese

1/3 cup fresh parmesan cheese

 

  1. In a large saucepan, cook butter, onion and carrots over medium heat until onion softens (about 3 minutes). Add chicken broth, broccoli and seasonings. Simmer until broccoli is softened, about 8 minutes.
  2. Remove 1 cup of vegetables, coarsely chop and set aside. Using an immersion blender, blend remaining vegetables and broth.
  3. Place flour in a small bowl. Add in cream a little at a time stirring until smooth. Bring blended vegetable mixture to a boil and whisk in cream mixture. Continue whisking until thick and bubbly, about 3-4 minutes.
  4. Remove from heat, stir in cheeses & reserved chopped vegetables and serve immediately.
